I fell upon the idea of cooking large amounts of food on Sunday afternoon to make meal preparation during the week much easier while I was still working. I find that cooking a large amount of food on days that I feel like it makes the same amount of sense now that I have COPD. When I worked, I would just need to warm up some items and then maybe open a jar of home canned beans, corn, or some other delicious home canned item. This made food preparation and clean up much easier when I came home from work exhausted. Now that I am retired and have COPD, I find the same philosophy still works. The tweak is that when I cook large amounts is not always on Sunday.
The crockpot and the instant pot are both great friends of mine. I am trying a new pork rub recipe today. I will add sauerkraut to the mix and that will give me 2/3 of my well-balanced meal ready this evening.
